Sausages braised in onions and cider

Our take on sausage casserole makes a wonderfully warming and filling dish, and is perfect for mid-week family suppers.

Serves 2-3 


Rapeseed or olive oil
1 pack of 6 Wicks Manor Pork Sausages
2 medium onions, halved and sliced
1 bay leaf
1 tbsp plain flour
450ml dry cider
1 tsp Dijon mustard
Handful chopped fresh parsley
Mashed potato to serve


1. Heat 1 tbsp of oil in a large casserole or pan over a medium heat. Add the sausages and cook until browned all over, then remove from the pan.
2. Add the onions and cook for 5-7 minutes, stirring regularly until golden.
3. Sprinkle over the flour and cook for 1 minute, then stir in the cider, bay leaf and mustard.
4.Bring back to simmering and let it all cook for 5 minutes.
5.Return the sausages to the pan and continue to simmer for 15 to 25 minutes until the sauce has thickened and the sausages are cooked through.
6.Garnish with the parsley and serve with the mashed potato.
